3 Ingredient Protein packed Tofu

Dreaming of silky smooth tofu without the GMO? This 3 ingredient soy free vegan recipe is packed with protein and all 9 essential amino acids using nutrient dense lentils and hemp seeds. Simple, fast and clean 🤍

INGREDIENTS:

  • 3 cups boiling water

  • 3/4 cup lentils

  • 1/4 cup hemp seeds

INSTRUCTIONS:

  1. soak lentils 2hrs-overnight (optional). soaking lentils activates a substance called amylase, which breaks down complex starch in lentils, making it easier to digest. lentils are a powerhouse of minerals and soaking them increases mineral absorption.

  2. rinse the lentils of the old water

  3. add all ingredients to the blender. let them sit in the blender until cooled to avoid eruption from blending.

  4. pour the mixture into a saucepan on medium high heat and stirring the mixture until it thickens. this process takes only a few minutes.

  5. the mixture sets quickly so pour the mixture into a heat safe container immediately after it thickens. I prefer a long glass container so my tofu is not so thick. the mixture pops out of the container easily so no need to grease the pan. set the tofu by chilling it in the fridge (mine took less than 10 min to chill before it was ready).

You can prepare your tofu in any way you like! bake, pan seared, air fry, herbs, spices, sauces; the possibilities are up to you :)
